With Greek black lentils and yellow rice, lentil rice, in addition to being a very tasty food, is also an important source of iron.

Recipe for Bioblastos lentil rice:
MATERIALS
250 gr. Bioblastos lentil rice, 1/2 tbsp. olive oil, 2 dry onions cut into slices, 1 tbsp. water, salt, pepper, yogurt with mint for serving.
Making
Rinse the lentil rice and let it soak for 20'. Then boil it for about 15 minutes, strain it and set it aside.
Put the oil in a deep pan and saute the onions on a low heat for 5' until they caramelize.
Add the lentil rice and the f/l. with the water and simmer until the liquid evaporates.
We serve it with yogurt and chopped mint.
